Sucrose esters are used in cosmetics, food preservatives, food additives, and other products. A class of sucrose esters with highly substituted hydroxyl groups, olestra, is also used as a fat replacer in food.

The sucrose monoesters of lauric acid, palmitic acid or stearic acid have excellent emulsifying properties and are used at low levels to emulsify flavours, colours and nutraceutical ingredients (e.g., omega-3 oils) to produce a number of clear beverage products.
